I wanted to share a fun and yummy recipe with you, courtesy of The Ritz Diner in Livingston, NJ. The dish is called “Pork Chops Giambotta” and is a personal favorite of Diners, Drive-ins, & Dives star, Guy Fieri (he visited the diner on a past episode of the show.) Pork Chops Giambotta

Ingredients
- Two 8 oz pork chops
- 2 sliced cloves of garlic
- 4 oz (each) mushrooms, Spanish onions, roasted red peppers
- 4 oz of pre-cooked sweet Italian sausage (sliced)
- 1/4 cup EVOO
- One whole sliced fried Idaho potato. (potato chip style)
- Pinch of salt and pepper
Instructions
Grill pork chops to leave grill marks.
Place pork chops in a 375° oven for 12 to 15 minutes. While the pork chops are in the oven, sauté all of the vegetables together in a frying pan with the olive oil until they are golden brown.
Add the sausage to the frying pan and mix together.
Place one pork chop on plate, then place half of veggies on top. Place second pork chop on top and place remaining veggies on top to make a “tower’ effect.
Take the potatoes and place them around the pork chop tower.
