One of hubby’s favorite things to eat is stuffed pork chops. His Mom made them perfectly. I decided to surprise him with some stuffed pork chops the other day. Instead of stuffing them with my usual mixture I decided I wanted to stuff them with spinach, which is one of his favorite vegetables. I kept it super simple, which is pretty much my favorite way to make anything. He absolutely loved the pork chops. He said they were perfect and asked that I make them again. Here’s how I made them.
Gluten-free Spinach And Cheese Stuffed Pork Chops
INGREDIENTS
- 16 oz fresh baby spinach
- 2x thick pork chips (mine weighed 1.5 pounds before cooking)
- 2 oz shredded mozzarella
- onion powder
- garlic powder
- salt and pepper to taste
INSTRUCTIONS
Preheat the oven to 350 f.
Place the spinach into a pan on the stove with a little bit of olive oil and cook on medium until it’s wilted.
Combine the spinach and the shredded mozzarella cheese in a bowl.
Cut an opening in the center of the pork chops. Do not slice it into halves, you are only making a pocket.
Stuff the spinach mixture into the pocket in the pork chops.
Sprinkle a little bit of onion and garlic powder on top of the pork chop.
Bake for 20 minutes.
Serve immediately with salt and pepper to taste.
